Fajita Meat in Bulk ~ Feed the Freezer

Read on to know how to prepare and freeze this delicious meat in 1 1/2 cup portions, perfect for those super busy days when you need dinner on the table fast!

  • 4-5 pounds of chicken, turkey (breasts or thighs) or beef
  • 2-3 onions, chopped fine
  • 2-5 cloves pressed or minced garlic
  • 2-4 chopped bell peppers
  • Easy Taco Seasoning ~ Recipe Rave (make up our fabulous taco seasoning!)
  • 2 deep skillets.

Chop onions up into fine pieces. Get both skillets ready to cook this in. We use 2 large deep skillets, or sometimes a dutch oven and a wide bottomed skillet. Use what you need, you are frying up 5 lbs of meat and onions at once!

Drizzle a little EVOO in your pans, as you begin to cook the onions, or spray with non-stick spray. Pre-cook onions for a few minutes, add garlic, and stir. While onions are sauteeing, cut chicken into thin strips, about 1/2 inch by 2 inches. Add to onions..

Saute onion garlic mixture, swirling chicken through the onion and garlic, to thoroughly coat. Sprinkle lightly with Easy Taco Seasoning mix. Continue cooking, stirring every few minutes. Just before it is finished, sprinkle liberally with Easy Taco Seasoning and continue cooking until nicely browned.

When meat is finished, taste it and see if you have the flavor you are looking for. Sprinkle with more Taco Seasoning if it isn't quite there yet. Adjust flavors.

Cool thoroughly and pack into individual containers or Ziploc bags. Label with date and freeze.
