Cucumber Salad ~ Summer Abundance
3-5 medium cucumbers, sliced
1 thinly sliced onion, try vidalia for a sweet salad or red onion for more tang and sass
1 cup thinly sliced carrots
1 sliced red pepper
Optional - sliced zucchini and yellow squash for additional color and flavor (especially when your garden is pumping them out!)
Combine in bowl. Whisk together the flexible marinade below, with your favorite tastes. Don't be afraid to experiment. Add to summer fresh veggies.
1/2 cup vinegar (can use regular, apple cider, rice wine vinegar, or herbed for different flavors)
1/4 cup olive oil EVOO
1/4 cup sugar (we're in the South now and this IS going to a Baptist picnic - OR use stevia!)
1 teaspoon celery salt
1 teaspoon salt
1/4 teaspoon pepper
Fresh herbs - what do you have on hand? Especially good with 1-2 teaspoons of fresh dill (or more to taste).
The whole point of this is to combine flavors, textures, colors that YOU and YOUR family like! Make it spicy, tangy, sweet or herbed. Play with your bounty of fresh veggies and make beautiful salads.
