Curried Mayonnaise

Wanting to top our fabulous Simple Paleo Primal Salmon Patties (our very basic, simple, salmon patty recipe that is simply out of this world) I whipped up a batch of slightly spicy, thoroughly tasty Curried Mayonnaise. We had had the salmon patties for several days in a row, and we wanted to kick them up a notch.
Too bad the photos are so awful - this is a really good curried mayo recipe!
Normally not a huge fan of mayo, but Curried Mayonnaise give it a whole new zing, perfect for sandwiches, salmon patties, hamburgers and more.
- 2-3 tablespoons mayonnaise
- 1/2 tablespoon lime juice
- 1/2 tablespoon lemon juice (or 1 full tablespoon of lemon OR lime)
- 1 1/2 teaspoons curry
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon cracked lemon pepper
- dash or two of salt
In a small bowl, mix mayonnaise and 1 total tablespoon of juice! Crack pepper into bowl, add curry, cayenne and a dash of salt. Mix well and tasted. Is it curried, creamy, zingy, lemon-limey? Or does it taste dull? Since curry varies so much, add a little more curry, perhaps another dash of salt, whatever it takes to make the flavor in your preferred range.

Serve immediately, or chill to use later.
