Pineapple Poblano Salsa

Pineapple Poblano Salsa is simply out of this world. Poblano chilies give it wonderful twist, with their slightly lemony, mild taste. Combined with a little extra jalapeno, they really wake up your taste buds.

The secret of the great flavors is reserving as much of the fruit juices as you can, along with cutting up the fruit evenly.

  • 1-2 cups pineapple
  • 1/4 cup cilantro, chopped
  • 1 poblano pepper, diced
  • 1 jalapeno cube or 1 jalapeno diced
  • 1 tablespoon lemon or lime juice, or for more flavor one of each!
  • 2-3 green onions, slivered

Chop fruit and vegetables as close to the same size as possible. Combine in bowl, and let flavors meld for a few hours or overnight. It is prettier to add the cilantro at the last minute!

Pineapple Poblano Salsa is the perfect accompaniement to blackened fish or grilled chicken.
