Baked Kale

Baked Kale is an absolute staple in our home. We can't get enough of it. Seriously, when I pull it out of the oven, I had better be ready to sit down and scarf it down, or there won't be any left! It drives them nuts when I try and stall and get a photograph...they want it NOW!
Baked Kale is our version of potato chips, totally safe on low carb, paleo primal, GAPS friendly diets. If you are looking for a healthy alternative to fried potatoes, Baked Kale is great. Satisfying the need for crunch and salt, try baking kale and see what your family thinks.

This recipe works exceedingly well with Kale although I have heard you can try other greens - just haven't tried Baked Collard, or Turnip greens, yet. Greens are nutrition packed powerhouse, loaded with anti-oxidants and nutrients!
- 1 bunch kale, washed and rinsed
- 1 dollop EVOO
- Sea salt and pepper to taste
- OPTIONAL - 1 cayenne pepper, chopped
Preheat oven 400 degrees.
Rinse kale and tear into pieces about 2 inches by 2 inches. It isn't a perfect science - just tear them into chip sized portions.
In a large, flat bottomed Pampered Chef Bar Pan or 10x15 pan, place kale. Drizzle with olive oil, and toss to coat. Sprinkle lightly with sea salt and pepper.
Pop into the oven. Baked Kale will need to cook between 10-20 minutes. Sometimes it bakes super fast, others it takes longer (not sure why - just know it varies) Check after 10 minutes, you can even lightly stir the Baked Kale, it helps it cook faster. Check in a few minutes, stir and continue cooking until light and crisp!

Serve....and watch out. It is our low carb, paleo primal, GAPS friendly substitute for chips and we love it!
