Curried Cabbage

Last summer, I made a Curried Cabbage Saute and have been craving it ever since. Naturally, I did not write down the recipe. So, after a bit of searching, cobbled this one together tonight and it turned out superb. Paleo, primal, GAPS, anti-inflammatory diet friendly, totally gluten and casein free, you will love this simple Curried Cabbage recipe.
There are two versions, the regular and the Habanero Curried Cabbage Saute, take your pick! We served it with Habanero Salmon Patties and a simple quinoa

Read this portion with extreme care! I added a habanero cube to the Curried Cabbage, for added flavor and let me tell you, that was one HOT habanero, especially mixed with the curry. We literally sat there and cried and ate it...which is a family pastime! Dave oohed and ahhed and kept saying "it was just what the doctor ordered." Let me tell you, if you have parasites, it would knock them out. I also had a little leftover Taylor Farms Broccoli Slaw, and threw that in.
- 1 onion sliced very thin
- 1 small cabbage sliced very thin (about 8 cups)
- 2 teaspoons curry, toasted
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Sea salt and cracked pepper to taste
- EVOO
- Squeeze of fresh lemon
OPTIONAL: 1 habanero or 1 habanero cube

Toasting spices: In a completely DRY, flat bottomed pan, toast curry, turmeric and cumin. Move spices around the pan for a few minutes, toasting to release flavors. Pour into a bowl and cool. (You can skip this step - but it truly intensifies flavor!)

Drizzle EVOO into a warmed saute pan, on medium heat. Throw sliced onion in, sauteeing until translucent. Add spice mix and stir. Add cabbage, salt and pepper, and saute.
Cook for a few minutes, then add 1/4 cup of water (or a bit more if needed) and stir. This will allow spices to coat the cabbage, cooking it with a lid on, to a crisp tender.
Optional: If adding habanero - do it after adding water, stir well and serve. Coat lips with some sort of lip balm....yes, with the curry, it is that hot!
Serve immediately.
