Scalloped Potato Peels - Crockpot Side
Determined not to waste, we decided to whip up this yummy side dish from potato peels. Yes, you read it right, potato PEELS! Make this simple dish in the crock pot in minutes, and let it cook all day for a yummy side dish.
Scalloped Potato Peels ~ Crockpot Sides was created using Yukon Gold Potatoes. They make a far superior dish, than than regular Idaho's.
Layer in crock pot
- 7-10 cups Yukon Gold Potato peels (about 2 handfuls per layer!)
- 1 onion, thinly sliced
- 1 cup cheddar cheese grated
Sauce
- 1/2 teaspoon thyme
- 1/2 teaspoon sage
- 1 teaspoon sea salt
- 1 teaspoon pepper
- 1-2 teaspoons of garlic crushed
- 1 cup of almond milk unsweetened, or canned milk
Stop throwing your potato peels away and make a delicious side dish out of them instead. Simply spray a crockpot with non-stick spray, then layer potato peels, sliced onions and 1/4 cup of cheese.
Whip together thyme, sage, sea salt, pepper and garlic in a bowl. Add almond or canned milk and whip lightly to thoroughly blend. Pour over layered potato peels in the crock pot.
Cover and cook on high for 5 hours, or low for 8-9.
Add remaining 1/4 cup of cheese in the last 1/2 hour of cooking. Serve. May need additional salt and pepper to taste at the table (we are always cautious with sodium restricted diets!
