Summer Vegetable Saute ~ Garden Fresh

- dash of extra virgin olive oil
- 1 1/2 cups of zucchini, squash, onions or garden fresh veggies of choice
- 2 green onions
- salt and pepper to taste
- fresh herbs and spices to taste
- garnish with fresh cilantro, parsley or herbs
Pour a dash of EVOO in a heavy bottomed skillet. Try cast iron for a little extra iron stores. Saute fresh veggies in a dash of olive oil. Saute veggies until crisp tender. Add fresh herbs at the end. Do not overcook!
