Summer Vegetable Saute ~ Garden Fresh

Make a delicious Summer Vegetable Saute ~ chock full of garden fresh veggies, perfect for lunch or dinner!  This is an extremely flexible side dish, whips up in mere minutes on the stove!  Enjoy summer's bounty while it lasts.

  • dash of extra virgin olive oil
  • 1 1/2 cups of zucchini, squash, onions or garden fresh veggies of choice
  • 2 green onions
  • salt and pepper to taste
  • fresh herbs and spices to taste
  • garnish with fresh cilantro, parsley or herbs

Pour a dash of EVOO in a heavy bottomed skillet. Try cast iron for a little extra iron stores. Saute  fresh veggies in a dash of olive oil. Saute veggies until crisp tender. Add fresh herbs at the end. Do not overcook! Image
