Chilaquiles ~ How to Video and Recipe

Years ago, I went to a friends house and she made what she called Chilaquiles. She had grown up in Mexico and made me one of her favorite dishes. So easy and simple, she dipped fried corn tortillas in enchilada sauce, layered in a cast iron skillet with shredded cheese and olives and then cooked it gently on the stove. It was one of the most delicious things I have ever tasted!
Not being a fan of fried food, I knocked frying the tortillas in oil and fashioned my own version. With only 3 ingredients, Chilaquiles are a simple, yummy, enchilada casserole comfort food dish that whips together in minutes but is good enough to serve company! Chilaquiles freeze well and leftovers make great lunches.
Ingredients
  • 2 large cans Enchilada Sauce or Red Sauce (or make our easy Enchilada Sauce Recipe)
  • 2-3 cups sharp cheddar cheese, Monterrey Jack or other shredded cheese
  • large package of tortillas

Directions:

Preheat oven to 350 degrees. Spray a 9x12 casserole dish with non-stick spray. Grate cheese and set aside. The amount of tortillas you use will vary, depending on how thick and close you layer them. Start by cutting about 20 tortillas in half. Cut more as needed.
Pour enchilada sauce in a shallow bowl that will allow you to dip each tortilla half into the bowl, covering each side. Dip each tortilla half in enchilada sauce, place on the bottom of the casserole dish. Cover the entire bottom of the dish with enchilada sauce dipped tortillas. Sprinkle a layer of cheese. If you want to add sliced olives (or chicken or taco meat you can although it pops it out of the vegetarian category!)
Repeat with 3 layers, top with cheese. Bake in a 350 degree oven for about 30 minutes, until cheese is melted and bubbly. Serve with beans and rice for a yummy comfort food meal!
