Does anything enthuse you to cook like purging files in the office and updating records *ALL* afternoon, shredding two massive Earth Fare bags full of papers, making a brand new, current Family Control Journal. All the while, thinking about the juicy heirloom tomatoes sitting on my kitchen island, plotting precisely how to make the perfect fresh tomato lasagna, lest Operation Organize kill me. So, as the clock ticked 4:30 and I had had enough file purging, off to make that dreamy Heirloom Tomato GF Lasagna w/Mizithra Cheese and Fresh Basil as a treat for sticking to the task!
And to use up those gorgeous heirloom tomatoes and basil - always multipurpose!
All that afternoon purging and plotting was a major score, netting this light, summery, delicious lasagna that was not heavy in the least. THRILLED with how it turned out! Thankful to have made a lasagne that does not make me feel heavy and gross afterwards! Perfect!

Poblano peppers remain an absolute obsession. Love their crisp, slightly zingy, lemony, luscious fresh flavor. This "nutty" advice comes from Dr. Mercola's website. We switched to the brand her recommends and LOVE it! Read the whole article below- but the kind he suggests is Arrowhead Mills organic peanut butter. This peanut butter is made from Valencia peanuts, which are grown in New Mexico. Aflatoxin, a group of poisonous chemical compounds produced my mold, has not been reported to be a problem in that state due to the dry weather conditions. In addition, the organic version of peanut butter is pesticide free, and it tastes great.
