Bone Building Broth

A passion for history, combined with a love for nourishing foods and a passion for reading cookbooks helped perfect our Bone Building Broth. It all began with our time as living historians reenacting the American Civil War. This recipe grew out of reading accounts of housewives and nurses, who used a similar broth to nurse soldiers back to help.
We have modernized the recipe to make in a crockpot. It is that easy to make a flavorful, protein rich, bone building broth.
Bone Building Broth
- 1/4 a turkey carcass, 1/2 chicken carcass (thrown in the neck and all bones)
- 3-4 quarts of fresh water (we use reverse osmosis)
- 1-2 tablespoons organic cider vinegar
- 2 onions, quartered, leave the peels on
- 8 whole cloves
- 3-4 ribs of celery with leaves, broken into 3 inch pieces
- 2-3 carrots, scrubbed well and cut into chunks (do not peel)
- 3-6 cloves of garlic, leave the peel on and chop into 3 or 4 pieces
Dried herbs
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 1 teaspoon basil
- 1 teaspoon sage leaves (or a little less if powdered)
- 1 teaspoon salt
- 1/2 teaspoon celery seed
- 2 bay leaves
Directions.
Throw all ingredients into the crockpot, and put on a low simmer all day. It is that easy to make a flavorful, protein rich, bone building broth.
You can stir mid-day, and press on the bones with a potato masher, to release more flavor and nutrients.
Drain through a colander and then a 2nd time through a strainer. Use immediately or freeze in 1 quart containers, or ice cubes for individual recipes!
