Citrusy Jicama Salad

cit_jic_saladFound two gorgeous jicama at Earth Fare, the day the big snow storm hit and couldn't resist buying them! Now who really wants to bite into COLD jicama when it is snowing outside? Me! Searched online and found this fantastic recipe at Simply Recipes and made it, tweaking it! It tastes like summer with the citrusy flavors - wonderful on a winter day when you are dreaming of the warm summer sun and your body is screaming for nutrition! Full of antioxidants, vitamins and veggies, this is a fantastic choice for paleo primal and anti-inflammatory diet meal plans. It was great as leftovers on top of butter lettuce two days later! Would be a fantastic picnic salad - it stays crunchy! Optional Spicy Citrus Jicama Salad recipe too! Either version is yummy!

  • 1 large jicama (about 1 1/2 pounds), peeled, then julienned or cubed (easiest to work with if you cut the jicama in half first)
  • 1/2 red bell pepper, finely diced
  • 1/2 yellow bell pepper, finely diced (or one colored bell pepper)
  • 1 heirloom "ancient bell" pepper (optional - we had them on hand)
  • 1/2 cup chopped red onion
  • 1/2 a large cucumber, seeded, chopped
  • 1 navel orange, peel first, then slice, then cut into little pieces
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup lime juice
  • Pinch of cayenne (1/4 teaspoon for more kick)
  • Pinch of paprika
  • Salt

Optional HOT and Spicy Citrusy Jicama Salad

  • 1-3 jalapeno or cayenne peppers - diced (if you want to bring up the heat!)

Optional

  • 1/2 avocado chopped
  • 2 Tbsp olive oil

Method

1 Toss together the jicama, bell peppers, red onion, cucumber, orange, and cilantro in a large serving bowl. Pour lime juice over all. Sprinkle with a pinch of cayenne and paprika. Season generously with salt. Taste and adjust flavors.

2 Let sit a half an hour before serving. Taste and adjust any seasonings that to bring it to the flavor YOU want!

Serves 4.
