Lemony Greek Salad

Lemony Greek Salad goes together in minutes and pairs up perfectly with Grilled Feta Jalapeno Burgers for a simple, low carb, gluten free meal!
Salad Ingredients
- 1 head of Romaine lettuce, washed and cut into bite sized pieces
- 1/2 English cucumber, sliced
- 1 cup sliced mushrooms
- 1 diced red bell pepper
- 3 green onions, chopped into thin slices
- 1 oz Feta cheese (we used Krysssos Co Feta with Tomato and Basil)
- Optional - Greek Olives
Make Lemony Greek Salad Dressing, set aside to let flavors meld. Tear up Romaine lettuce, spin in salad washer and place in a large bowl. Chop cukes, mushrooms, red bells, and add to bowl. Slice green onions with scissors over the salad. Add HALF of the recipe of Lemony Greek Salad Dressing, and toss well. Sprinkle 1 oz of Feta Cheese over salad, and toss again. Garnish with Greek Olives if you so desire. Serve immediately.
Lemony Greek Salad Dressing
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon minced garlic (or use 1 or 2 cloves)
- 1/2 teaspoon salt and freshly cracked pepper (adjust these to your personal TASTE!)
Add all ingredients into a glass jar, put the lid on and shake vigorously to mix! Let sit while you make the salad. Enough for 2 large family salads!
