A simple, delicious homemade Blue Cheese Dressing recipe to dress your salads with sublime simplicity!
- 1/2 c. mayonnaise (DO NOT use salad dressing)
- 1/2 c. blue cheese, crumbled
- 1/2 c. sour cream
- Garlic salt to taste

When I spotted a beautiful, crisp poblano pepper at Earth Fare today, had to create a salad. Wanted something along the Chipotle line, but trying the poblano pepper for crunch and flavor. I have cooked poblanos, but never tried them raw. This salad was absolutely FANTASTIC, with tender chunks of chicken, black beans, avocado, lime juice, cucumber poblano, and a salsa made of tomatoes and avocados! Found two gorgeous jicama at Earth Fare, the day the big snow storm hit and couldn't resist buying them! Now who really wants to bite into COLD jicama when it is snowing outside? Me! Searched online and found this fantastic recipe at Simply Recipes and made it, tweaking it! It tastes like summer with the citrusy flavors - wonderful on a winter day when you are dreaming of the warm summer sun and your body is screaming for nutrition! Full of antioxidants, vitamins and veggies, this is a fantastic choice for paleo primal and anti-inflammatory diet meal plans. It was great as leftovers on top of butter lettuce two days later!
