Quick Tortilla Turkey Wrap

On the next to the last day of the gluten challenge, we had 2 hunking tortillas to use up. After spending two days at a ladies conference, we needed a simple dinner and Quick Turkey Wraps were born! We have always loved making wraps, the epitome of an easy meal, only we did not have any of the "normal" things one uses - cream cheese, mayonnaise, cheese, etc.
So we changed up the recipe and made Quick Turkey Wraps that are not only yummy, but low fat and dairy free! Quick Turkey Wraps are the ideal cool, portable lunch or snack, great to drag to a ball field, for a weekend picnic or for lunches! This is a recipe for 1 large low fat turkey wrap, that could easily be double, tripled or quadrupled, etc, to meet your needs.

Turkey Wraps can be cut straight across, into spirals for an easy breezy appetizer platter that can be made ahead! Each wrap can be cut into 5-12 spiral appetizers, depending on the size of the tortilla. Perfect for graduations, showers, parties, and celebrations year round!
- 1 large flour tortilla (any size will do)
- turkey cold-cuts
- mustard
- green onions, sliced
- romaine lettuce, sliced into thin slivers
- optional toppings - tomatoes, bacon, cheese, olives, red peppers, jalapenos
Super quick and easy directions that require a little bit of chopping and assembly - no cooking whatsoever!
Take the tortilla, and spread mustard over the whole tortilla. Layer turkey cold-cuts down the middle of it, as you would put toppings in a burrito. Top with romaine lettuce, slice green onions on top. Add any other toppings you would like.

Roll like a burrito, and either slice into pinwheels or in half diagonally. Eat immediately, or pack into containers for quick and easy lunches and snacks.
