Sausage and Peppers

Easy, freezy Sausage and Peppers is a great recipe to make when you find sausage on sale. My husband loves sausage, and he'll happily eat green peppers, so I make it up just for him. I don't tolerate either well, so this gives him some of his favorites packaged up for freezer lunches, giving him much needed variety in meals.

If you have been wondering how to batch cook lunches, try Sausage and Peppers. An easy way to get started freezer cooking, these were super economical. For less than $3.00, I made 3 large meals for him (I was out of containers or it would have been 4!)

Sausage and Peppers is so simple to make, we whipped it together while putting away groceries and making sides for our Chick-fil-A Spicy Chicken in the Crockpot!

  • 1 lb sausage
  • 2 green peppers, seeded and sliced thin
  • 1 onion
  • 2 jalapeno cubes, or 2 chopped jalapeno peppers
  • EVOO
  • cooked rice

Clean bell peppers, seed and slice into relatively thin, fajita like slices. Peel and slice onions.

Place a large, wide skillet on the stove, turn on to medium heat. Drizzle EVOO in the pan and turn on. Throw sausage in, crumbling as you go. As sausage begins to cook, dump onion and bell pepper mix, along with jalapeno peppers.

Cook until sausage is done, and onions and bell peppers have tenderized, about 5-8 minutes. This is quick! While it is cooking, prepare your dishes to freeze in. Spoon rice onto the bottom of each freezer safe dish (we use about 1/2 cup rice to really keep the carb count low). Spoon Sausage and Peppers over rice. Cool completely, then pop into the freezer.

Sausage and Peppers are an economical way to use sausage, a bounty of green peppers from the garden along with a few other ingredients and they freeze exceptionally well. Start batch cooking today!
