Clean Out the Fridge Stir Fry sums up the dinner we had tonight. Truly, I wanted to make reservations. It has been a long, hard week, I am worn out and it is payday. Four reasons to go out to dinner.
Alas, our debt snowball calls, hubby is getting new gla$$es tomorrow, I have a bunch of odds and ends veggies to use up AND I am at the lowest weight I have been at in years and years and years. Eating out would kill all of that, by degrees. Plus, Clean Out the Fridge Stir Fry is a great Anti-Inflammatory Diet, Paleo/Primal meal....for pennies, since you have to use the stuff up anyway!

We have found the perfect Paleo/Primal, Anti-Inflammatory meal, without that worldview of course.
Oh. Happy. Day.
No way around it, Poblano Fajitas are easy to whip up, loaded with flavorful veggies and served in cabbage cups, instead of carb laden corn tortillas. Perfection! Just finished roasting two delicious Herb-Crusted Pork Loins, along with Roasted Peppers and Portabellos, a sunflower pallette of yellow, orange and red peppers with portabellos and onions. This was one of the best dinners EVER, everyone rated it a high 10. This would be an ideal dinner to serve guests - simple, prepared in advance and delicious. Low carb, gluten and casein free, full of herbs and assembles in less than 10 minutes!
The simple rub made with herbs tastes almost like Carrabba's famous "Dipping Sauce!" We have figured that recipe out and will be posting soon under Restaurant Remakes! Herb Crusted Pork Loin is paleo and primal friendly, perfect for the Anti-Inflammatory Diet and utterlly superb in every way!

I absolutely love to read recipes. Today, while cleaning out the fridge, evaluating what needs to be used and putting together a grocery list, I came across a bag of oranges and a bag of apples that needed to be used, along with 1/2 of a huge pork loin bought on sale. Later on, Southern Living happened to email me some Christmas recipes, along with Pork Tenderloin with Carolina Apple Compote….and this is my adaptation with a twist, upgraded to anti-inflammatory choices.
