Chicken Drumsticks with Sweet Potatoes and Pineapple

I bought a ton of fresh sweet potatoes at Christmas time, for a really great price. Sweet potatoes are fabulously healthy, a great source of fiber and cook up beautifully in the crock pot. This recipe comes from the Pillsbury Doughboy Slow Cooker Recipe book. This is very much like a sweet and sour chicken – very good. That said, our family is not huge on sweet and sour, but it is a great frugal recipe, made for about $6!
- 2 medium dark orange sweet potatoes or yams, sliced (about 3 cups) I did 4
- 1 8 oz can pineapple tidbits in unsweetened juice, drained
- ½ cup chicken broth
- ¼ cup finely chopped onion
- 1-2 teaspoons grated gingerroot
- ¼ cup barbeque sauce
- 2 tablespoons honey
- ½ teaspoon dry mustard
- 8 chicken drumsticks (I used 2 large chicken breasts)
Spray your crock insert with non-stick spray. Combine sweet potatoes, pineapple and juice, broth onion, and gingerroot, mixing well.
In another bowl, mix BBQ sauce, honey and dry mustard. Mix well and coat chicken with BBQ mix. Arrange chicken in a single layer over sweet potatoes. Spoon any remaining BBQ sauce mixture over chicken.
Cover and cook on LOW for 7-10 hours. Serve over rice if desired, with Thai Coleslaw.
UPDATE & RECIPE TWEAK - My best friend back home made this - and tweaked the recipe with her ingredients on hand! DO THAT!! It is the wisest thing to do.
January 15 at 2:49am I made it! I had to improvise, though. I used russet potatoes , grey poupon, and ginger seasoning in place of sweet potatoes, dry mustard, and ginger root. I also added a dash of soysauce. I thought it was delish. Everyone, except C liked it.
