The Generals Dinner ~ Smothered Buttermilk Chicken over Biscuits

The Generals Dinner ~ Smothered Buttermilk Chicken over Biscuits
We had the pleasure of eating The Generals Dinner at the Fairfax Inn, outside Gettysburg, the historical inn that General Robert E. Lee stopped and ate at on his retreat from Gettysburg. This meal was simple, yet profoundly delicious, a creamy chicken over biscuits! We have reviewed it on our LivingHistorySites.com website (for all you history buffs!).
Imagine my excitement when I noted a dish that looked similar in the Pillsbury Doughboy Slow Cooker Recipe book. I have changed the recipe quite a bit, to have a more historical flair without using modern mixes.

You will need to make some sort of biscuit to serve this over. I made my Grandma Wilkie’s recipe for fluffy buttermilk biscuits. You can use a 10.2 oz can of large refrigerated biscuits.
- 1 lb boneless chicken breasts or thighs cut into ¾ inch pieces
- 3 medium carrots sliced
- 1 chopped onion
- ½ cup water
- 2 tablespoons butter
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 bay leaf
Homemade Gravy Mixture
- 1/3 cup buttermilk (or 1/3 cup milk with 1-2 teaspoons lemon juice)
- 2 Tablespoons flour
- ¼ teaspoon thyme
- ¼ teaspoon sage
- 1 teaspoon chicken bouillon
20 minutes before serving, whip together and add, along with peas.
- 1 cup frozen sweet peas, thawed and drained

Spray 6 quart cooker with nonstick spray. Combine chicken, carrots, onion, water, butter, salt, pepper and bay leaf, mixing well. Cover and cook on low for 6-8 hours. This smells delicious!

About ½ an hour before serving, add the Homemade Gravy Mixture into the crock pot and stir well to incorporate. Add peas and stir well, cooking an additional 20 minutes or so.

Make biscuits. Serve over biscuits. Add a salad and you have a great meal for a frosty cold night!
