Winter Root and Sausage Casserole

Inspired by the Pillsbury Doughboy Slow Cooker Recipe book, this Winter Root and Sausage Casserole is really more of a delicious winter soup that will chase the chill of a cold, winter day. We served it with Sweet Potato Bread, and a tossed salad. Plenty of vegetables, hearty yet still light! Around 430 calories (depending on the type of sausage you use) with 4 grams of fiber, Winter Root and Sausage Casserole is gluten and casein free (sans cheese sprinkles pictured above).
- 1 large baking potato cut into ½ inch cubes
- 1-3 large dark-orange sweet potatoes or yams, peeled, cut into ½ inch cubes
- 2 medium carrots, sliced
- 1 medium parsnip, sliced (optional, if you don’t have them add an extra potato)
- ½ cup chopped onion
- 1 lb smoked sausage links sliced (we used Mild Italian)
- 2 cups Bone Building Chicken Broth ~ or~ 1 14 oz can of chicken broth
- ½ teaspoon dried thyme
- Salt and pepper to taste
- ¼ cup chopped parsley
In 6 quart slow cooker, combine all ingredients except parsley. Mix well to blend flavors. Cover and cook on low setting for about 7 to 9 hours. Taste and adjust seasonings to your liking. If it needs more salt or pepper, sprinkle some in!
Serve with a tossed green salad and bread for a hearty meal.
