This recipe for Taco Meat in Bulk made 11 packages of meat total, in 2 cup portions. Use what you find on sale, or prefer, ground hamburger, chicken, turkey, pork or buffalo will all make a great taco meat.
8-10 pounds of ground meat
2-4 onions, chopped fine
2-8 cloves pressed or minced garlic
Easy Taco Seasoning ~ Recipe Rave (make up our fabulous taco seasoning!)
2 deep skillets.
Chop onions up into fine pieces.Get both skillets ready to cook this in. We use 2 large deep skillets, or sometimes a dutch oven and a wide bottomed skillet. Use what you need, you are frying up over 10lbs of meat and onions at once!

If you are using a meat with a lean fat content, use a drizzle of EVOO in your pan, as you begin to cook the onions, or spray with non-stick. Cook onions for a few minutes, add garlic, and then add broken up pieces of meat.
Stir onion garlic mixture incorporating into meat, to flavor. Sprinkle lightly with Easy Taco Seasoning mix. Continue cooking until meat is no longer pink.

Depending on the meat you use, you may have a pan full of liquid and meat about half way through cooking. Take a colander and drain the water/fat mixture off, by dumping into a colander. Return meat mixture to pan, sprinkle liberally with Easy Taco Seasoning and continue cooking until nicely browned.

When meat is finished, taste it and see if you have the flavor you are looking for. Sprinkle with more Taco Seasoning if it isn't quite there yet. Adjust flavors.
Cool thoroughly and pack into individual containers or Ziploc bags. Label with date and freeze.
