Easy Espresso Brownies from a Mix
When you need a quick recipe to mix up and serve to a crowd, Easy Espresso Brownies from a Mix are sure to please every time! Whip up a double batch in less than an hour, and you will have a fabulous dessert that folks LOVE!
- 2 Brownie mixes - "Family Size" (Pillsbury 9x13 Choc Fudge 19.5 oz)
- 1 cup oil
- 1/2 cup freshly brewed espresso
- 4 eggs
- 1 Tablespoon vanilla
Preheat oven to 350. Brew a double shot of espresso in machine, and cool slightly.

In a large bowl, dump the two brownie mixes. Add eggs, oil, espresso and vanilla, and stir well. Never overbeat brownies, it is not a cake mix!
Pour into a 9x13 baking pan, that has been sprayed with non-stick spray.
Bake for 40-50 minutes.
Cool thoroughly, cut and enjoy!
