German Chocolate Cake ~ Grain Free

After creating our Fudgy Rich Brownies with Almond Flour - GF CF I was determined to both stay on our eating program and make some sort of German Chocolate Cake that was grain and sugar free. Continuing our experiments with the hot stash of Trader Joe's Almond Meal, for my birthday, came up with this slightly sweet, thoroughly decadent grain free, sugar free German Chocolate Cake with almond and coconut flour that is GFCF.
As ever, the goal was to make a birthday cake we could eat out of almond and coconut flours, a guilt free, gluten free, casein free treat, using what we had. The desire was to make something low carb, LOW sugar, no atrocious sweeteners, that was GAPS diet, Paleo/Primal friendly, without the worldview. Do you make this sort of effort to cook? We do!
Frost it with our luscious Pecan Coconut Stevia Frosting which is also sugar free and stevia based. Happy birthday!
German Chocolate Cake ~ Grain, Sugar, Gluten and Casein Free
Ingredients
- 1 cup of dark chocolate chips
- 3/4 cup coconut milk
- 10 drops vanilla stevia
- 1 teaspoon vanilla
- 2 eggs, lightly beaten
- 1 cups almond flour (I used Trader Joe's Almond Meal)
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
Preheat oven to 350 degrees. Grease an 8 inch round stone or small cake pan and set aside.

Measure out dry ingredients, almond flour, coconut flour, salt and baking soda, stir and set aside.
In a small saucepan, over low heat, add the coconut milk and chocolate. Gently melt the chocolate, stirring frequently. Add 10 drops vanilla stevia. This is a beautiful mix it is hard not to stop right there!

Keep stirring until thoroughly melted.

Take off heat, stir in beaten eggs, incorporating fully. You do not want to scramble the eggs at this point, so make sure it is not too hot.

Stir in the dry almond/coconut flour mix, completely mixing. At this point, it is good to taste again, and adjust the stevia a final time, if you can handle sampling raw eggs. Add drops 3 at a time until you get to desired sweetness. This is not a super sweet recipe, keep that in mind! It has a luscious, deep, rich chocolately flavor. Learning how to bake without sugar is an art that is developed over time!
Pour German Chocolate mixture into prepared pan, and bake at 350 degrees for 20-25 minutes. Let cool briefly, and enjoy!

German Chocolate Cake ~ Grain and Sugar Free - GF CF are absolutely WONDERFUL! Thick, rich, fudgy and missing the gritty texture I expected almond flour to give them.
Surprisingly enough, German Chocolate Cake with Almond Flour were even better the next day! A delightful, protein rich snack, perfect with a steaming hot cup of strong coffee, with a swirl of coconut cream.
