Chocolate Peanut Butter Banana Snack Cake GF CF
Chocolate Peanut Butter Banana Snack Cake GF CF was born out of total desperation - we wanted a treat out of limited ingredients! If you have bananas, peanut butter, eggs an some coconut flour - you can whip up this snack cake. Especially fun for the kids with a dollop of fruit only jam on top!
This isn't as fudgy rich or wonderful as our Fudgy Rich Brownies, but it is an interesting protein loaded snack cake that will tide you over until lunch, or give you a burst of blood sugar stabilizing protein until dinner.
In a food processor, assemble the following ingredients:
- 2 mashed banana
- 4 eggs
- 1 cup peanut butter
- 1/3 cup coconut flour
- 1/3 cup cocoa
- 1 cup almond milk
- 1/2 teaspooon liquid Vanilla Stevia
- 1 teaspoon vanilla

Preheat oven to 350 degrees. Grease an 8 inch round stone or small cake pan and set aside. Measure out ingredients and throw into the food processor. Whir on high for one minute. Taste and adjust flavors - the taste of the banana will determine if you need more stevia, or vanilla.

Pour Chocolate Peanut Butter Banana Snack Cake GF CF mixture into prepared pan, and bake at 350 degrees for 20-25 minutes. Let cool briefly, and enjoy with a dollop of fresh, fruit only jam on top.
