Coconut Gelatin ~ Coconut Happiness

Wild about coconut, and deeply committed to our gluten free, casein free, sugar free lifestyle, I sat looking at a box of coconut milk, craving dessert.

Coconut Gelatin was born out of that, a simple dessert that cooked up in about 5 minutes, then took another hour to set. Coconut Gelatin got RAVE REVIEWS from our family and Emily insists that it be called Coconut Happiness, the other name does not quite describe it adequately. We sat and watched Biggest Loser and ate it, which makes you ponder calories and fat, something I normally am not big on. Nutrition is the name of the game and I do count carbs, though not obsessively.

50 calories in the gelatin, 100 calories in coconut milk - split three ways it was 50 calories per serving!

  • 2 Tablespoons plain gelatin
  • 2 cups unsweetened coconut milk
  • 10+ drops Vanilla stevia
  • dash of sea salt (optional)

Heat 1 cup of unsweetened coconut milk in a small saucepan on medium. Put in 10 drops of vanilla stevia and stir well, while bringing to a almost a boil. While it is cooking, put a teeny, tiny dash of sea salt into it, stir and taste. Does it need more stevia? If so, add 3 drops at a time, until it comes into desired sweetness.

When coconut milk is just about to boil, add plain gelatin and stir vigorously for 2 full minutes, incorporating fully.

Add 2nd cup of unsweetened coconut milk, stir thoroughly and taste. You can add a few more drops of stevia at this point, if you desire.

Chill thoroughly in the fridge for an hour or two, then enjoy! It would be delicious topped with berries, mango or any fruit.

Okay, I will admit it. I ran into the kitchen on commercial break (we watch it online, the day after it airs) and threw this in bowls - so sorry for the bad picture! Should definitely re-shoot this and try for more of an elegant look!
