Banana Orange Cake GF CF

While out scouting around the web, I found this fabulous blog, Family2Table written by Chef Emily Duff. I thoroughly enjoyed reading her fabulous blog and highly suggest you check out her interesting take on REAL FOOD!

Gotta love a fellow foodie!

I was intrigued by this recipe for Banana Muffins. Using what we have, I changed it up a little and created a Banana Orange Cake with coconut flour that turned out superb! I made it GF CF gluten free and casein free (well it has butter) and of course, sugar free. Don't tell the kids, but it has more protein and fiber and is actually ideal for those days when my own personal Emily is out working with the horses, mucking stables for hours on end!

BANANA MUFFINS

  • 1 cup organic coconut flour
  • 6 pastured eggs
  • 2 ripe bananas, mashed
  • 1 orange, juiced and zested
  • 2 TBS melted butter (can substitute 2 TBS VCO instead!)
  • 2 TBS Virgin Coconut Oil ~ VCO
  • 2 TBS coconut milk
  • 2 TBS raw honey
  • 1 tsp aluminum free baking powder
  • 1/2 tsp. organic vanilla extract
  • 1/8 tsp. sea salt
  • 6-10 drops of Vanilla stevia, optional

Preheat oven to 350 degrees

In a food processor, mash bananas. Mine were frozen, so I ended up making a luscious banana freeze first, oh that was good, but persevered on whipping the bananas until they weren't frozen! Beat in eggs, 2 at a time. Juice the orange, add juice and some fresh orange zest. Add coconut milk, butter and VCO, vanilla and sea salt.

Add dry ingredients, blending well.

To bake a cake: grease a small 9 inch round pan. Bake at 350 for 45 minutes, until toothpick comes out clean.

For cupcakes: Fill muffin tins and bake for 20 minutes.

fill muffin cups in a muffin tin and bake for 20 minutes.

Emily writes, FOR CUPCAKES - frost with real cold butter whipped with vanilla and maple syrup to taste. add whipped cream, chocolate powder or cream cheese to frosting for delicious variations.
