Coconut Stevia Macaroons ~ Sugar Free

We were craving something yummy tonight, but on a very strict eating plan of meat, veggies, eggs. We can have coconut flakes and VCO, and I was looking for some sort of recipe to utilize them, but without using any sugar or fake, artificial sweeteners. Adapting this Coconut Macaroon recipe made these happy little cookies turn out pretty well for a sugar free, low carb treat!

  • 1 cup unsweetened coconut flakes (I used Tropical Traditions Organic Flakes)
  • 1/8 cup warm water
  • 1/8 VCO - Virgin Coconut Oil
  • 1 dropper full of liquid stevia
  • 1 egg, beaten
  • Vanilla - a dash of vanilla

In a large bowl, mix coconut flakes with warm water and melted VCO. Stir well, completely saturating the coconut flakes. Beat egg, add vanilla and stevia to the egg, mixing thoroughly. Pour into coconut mix, stir well.

With a small scoop, drop onto greased cookie sheet, or baking stone.

Bake at 400 degrees for 12-15 minutes. Cool and eat!

Makes 12 Coconut Stevia Macaroons, completely sugar and chemical free!

Now, if you are in the middle of a chocolate crave, you can melt about 15 BITTERSWEET chocolate chips and drizzle them on top of the cookies, for a magnificent treat. It adds a few grains of real sugar to each Coconut Stevia Macaroon, yes, but it also adds a delightful taste and look.

In fact, I think it was so good, that Emily should whip out another batch so we can make sure we still like it. Yes. That is it. Let's perfect the recipe....
