Chocolate Cake GF with Peanut Butter Frosting

Inspired by a Paula Deen cake baked by a friend, for our Gluten Free Christmas, we whipped up this easy, breezy Gluten Free Chocolate Cake with Peanut Butter Frosting!

Gluten Free Chocolate Cake can be absolutely excellent, if you tweak the mix a bit. Just add sour cream, extra eggs and some vanilla and your GF cake mix will turn out radically different!

  • 1 box Gluten Free Chocolate Cake Mix (tested with Namaste)
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1-2 teaspoon vanilla extract, pour some in

Preheat oven to 350 degrees. Generously grease a 9x13 pan, or 2 8-inch round cake pans. Set aside.

In a food processor, or mixing bowl, dump the gluten free cake mix eggs, oil, sour cream and vanilla. Mix for 30 seconds to blend. Scrape sides of bowl down. Blend for another minute, scrape sides of bowl down. Blend 30 more seconds, the batter should be thick. Gluten free cake batter will have a slightly gritty texture at this point, which is completely normal. Pour into prepared pans and bake as directed.

Bake 25-30 minutes, or until toothpick inserted in center comes out clean. Cool cake for half an hour, then frost with  Peanut Butter Frosting (below) or your favorite recipe!

Peanut Butter Frosting

  • 1 1/4 cup softened butter
  • 1 cup peanut butter
  • 1/4 heavy whipping cream
  • 5 cups confectioners sugar
  • 1 teaspoon vanilla extract

Optional (to make Chunky Peanut Butter Frosting)

  • 1/2 cup salted peanuts

In a food processor, whip softened butter until creamy and fluffy. Whipping the butter to the proper point of creaminess makes ALL the difference in a good, homemade frosting! Add peanut butter and continue beating, incorporating peanut butter into the fluffy mode. Add heavy whipping cream and vanilla, beating into the butters. Add powdered (confectioners) sugar a cup at a time, mixing thoroughly after each addition.

For Chunky Peanut Butter Frosting

Follow directions above. Add 1/2 cup salted peanuts into food processor, and coarsely chop and blend until desired consistency!
