Making candy is fast becoming a long lost art. When we first tasted this at a Sunday School Christmas party, we could not believe how good it was and begged Micheyle for the recipe! Decadent, delicious, pure butter and no toxic high fructose corn syrup are used in this spectacular recipe for English Toffee.

See, simple ingredients without nasty chemicals and high fructose corn syrup. This delectable English Toffee recipe, with simple step by step instructions, and lots of photos, will help you whip out a batch of easy, delicious HFCS-free treat for your family!

Micheyle’s English Toffee

Ingredients:

  • 1 C brown sugar, packed tight and rounded
  • 2 sticks butter (do not use margarine!)
  • pinch of salt
  • 1 teaspoon vanilla
  • 6 oz (1/2 bag) milk chocolate chips
  • 1 lb ground walnuts

To double this recipe:

Use 1 lb butter and 1 whole 16 oz. box of brown sugar. Increase the cooking time to approximately 20 minutes.

Directions:

Divide chips equally into 2 small bowl and set aside. Prepare 1 cookie sheet with butter and have a sheet of wax paper handy.

Bring brown sugar, butter and salt to a boil in a large skillet.

Boil for approximately 12 minutes over a medium flame, stirring constantly with a wooden spoon.

Test in a cup of cold water for hard crack. The toffee (when cooled in the cold water) should be crunchy and not stick to your teeth. Add vanilla and stir, then move QUICKLY to pour the Toffee on the prepared wax paper...

Pour toffee onto the greased cookie sheet and spread to the edges.

While still hot, top with 1 bowl of chocolate chips and spread them with a spoon until melted and covering all the toffee. Note the fuzzy jams bathrobe....you do NOT need to get dressed to make English Toffee, come ON folks, we are just keeping it real at The Prudent Wife.

While we never had this problem in sunny Southern California, the day we made and photographed our fabulous English Toffee recipe, it was F.R.E.E.Z.I.N.G. and we did not work fast enough. All that picture taking took it's toll, and the English Toffee "set up" before we got the chocolate chips melted completely. We don't have a microwave - so what to do? We turned the oven on to 350 and transferred the wax paper from a cutting board to a cookie sheet. Leaving the oven door slightly ajar, it quickly melted the chocolate to spreadable consistency.

Top with chopped nuts and cover with wax paper and flip the whole thing over. In this recipe, we just coated one side of our toffee, that was more than enough sugar for us!

The recipe calls for both sides to be covered. Easy enough to do, you simply repeat the steps above, spread chocolate on, top with nuts on the other side of the English Toffee.

Allow to fully set, which happened VERY fast in snowy Tennessee, much slower in warm So Cal.
