Pumpkin Ricotta Pudding - Stevia Low Carb

While roasting our Citrusy Poblano Turkey, could not resist making a pumpkin dessert to go with it. This Pumpkin Ricotta Pudding, is actually a low carb, zero sugar version of Budino, which is an Italian pudding! Only it is unbaked! Decidedly unglam here - serve it in beautiful crystal goblets with a dollop of freshly whipped cream.
- 1 1/2 cups ricotta cheese
- 6 packets of stevia
- 1 tsp cinnamon
- 2 tsp pumpkin pie spice
- 1/4 tsp ground cloves
- 1/2 tsp ginger
- 1-3 teaspoons pure vanilla
- 1/2 cup almond milk, whole milk or "milk" of your choice
- 1/2 orange zest
Whir in blender for 1 minute. Scrape down the sides, and whir in blender or food processor again. Chill thoroughly and serve with real whipped cream and a tiny bit of orange zest
