No Bake Cheesecake with Stevia ~ Low Carb
We are on day 11 of Atkins Induction, the strictest 14 days of the diet! We have been dessert free for 11 days, and had a particularly hard time walking past the peaches and blueberries of summer at the grocery store yesterday. While a cheesecake could never get near the perfection of one of God's perfect fruits, at least it is a dessert we can have! But where would I find a recipe for a cheesecake sweetened with stevia? Here it is!
- 1pkg unflavored gelatin or 1 Tablespoon gelatin
- 1 cup boiling water
- 16oz cream cheese (room temperature)
- 1/2 cup sour cream
- 1 tsp vanilla
- 1/2 tsp almond extract
- 1/2 tsp stevia concentrate powder (this is the concentrate that is 200x sweeter than sugar, will try LESS next time)
Instructions:
This is so easy. Simply dissolve gelatin in boiling water, I whipped it in a cup. Then put it in my food processor and added cream cheese and vanilla. Beat well. Add stevia and continue to beat. Whip in sour cream, adjust flavorings if needed.
Place into dessert dish or cake pan. Cool for one hour in the refrigerator.
