Butter Pecan Cake with Caramel Glaze

There is nothing in the least bit redeeming about this particular recipe! A friend of ours from Sunday school just had a beautiful baby girl., Kaitlyn Joy We are taking her dinner, and decided to whip up a quick, Southern cake. What could be better than a Butter Pecan Cake with Caramel Glaze? Yummy!
- 1 box Betty Crocker SuperMoist butter pecan cake mix
- 1 box (4 serving size) vanilla instant pudding mix
- 1 1/4 cup buttermilk
- 1/4 cup butter, softened
- 4 eggs
- 1 Tbsp pure vanilla
Heat oven to 325°. Spray bundt cake plan with a hefty dose of non stick spray, we like the Pampered Chef pan. Beat all of the ingredients for 2 minutes in a food processor. Pour into the bundt pan, spread out and bake for 46-52 minutes. Cool 15 minutes, remove from pan. Cool about 2 hours.
Caramel Glaze
- 3 Tbsp butter
- 3 Tbsp light brown sugar
- 3 Tbsp regular sugar
- 3 Tbsp whipping cream, heavy cream or coconut milk
Put all glaze ingredients in a small saucepan. Stir over medium heat until rich and buttery. Drizzle over cake!
