VCO - Maple Popcorn - GFCF Snack
If you have been put on a dairy/casein free diet, it can be frustrating in the beginning. Add this wonderful virgin coconut oil based Maple Popcorn to your repertoire and enjoy a yummy dairy free snack! We love popcorn as a family and we love butter on it and when going 100% casein free diet (no dairy) it has made popcorn a torture test. Sweet, salty and almost a dessert, you are going to love natural, sugar free, Maple Popcorn.
- 2 Tablespoons Virgin Coconut Oil
- 1 dropperful liquid stevia
- 1 teaspoon pure maple extract
- 8-10 cups air popped popcorn
- salt, as desired.
Air pop popcorn according to your popper directions. While popcorn is busy popping, melt VCO. Add 1 dropperful of liquid stevia and the pure maple extract. Stir well, remembering that oil and water do not like to mix. Drizzle over popcorn and TOSS immediately to incorporate throughout popcorn.
Salt lightly for that yummy sweet and salty, kettle corn taste. Enjoy! You can double the maple mix for this, if you like a heavier taste for the popcorn - we prefer it lighter. Enjoy.
Alternate recipe - with REAL MAPLE SYRUP!
Since we don't do chemicals, most butter substitutes that are "safe" are out. I was inspired to melt some VCO with a dollop of maple syrup and a tad of salt, stir it up and it was FABULOUS! You can make it as sweet as you want, or just put a tiny bit of
maple for less sweet. Adding nuts would make it good too. A great way to get VCO's healing properties in, and rescue an old favorite from the food intolerance pile!
