We are wild about what a simple shot or two of espresso does to a cake....so we decided to see if it would tone down frosting. Wow, we hit the jackpot with this frosting! For Emily's 16th birthday, the kid who doesn't love coffee or chocolate wanted our , GF Chocolate Espresso Cake that tastes like a creamy Starbucks cake, with the worlds best Creamy Espresso Frosting!

The old jingle "Summer, summer fruits, it wouldn't be summer without them," always pops through my mind as I carefully search the fruit available during the summer. While we normally try to eat grain free, sometimes we just want a peach cobbler or a nectarine crisp to scream resolutely - it was summer - we made beautiful desserts out of summer's bounty.
Other times, a box of perfect, sweet smelling nectarines or a summer stand basket full of peaches are purchased, yet never fully ripen. What to do with fruit that needs to be used, yet is not particularly tasty raw? Well our gluten free nectarine crisp is the answer for using up peaches, plums and nectarines that never quite riped, and it is as easy as could be, baked in the Pampered Chef Mini Baker.

Coconut Candy has been a favorite treat since before we left California. That hot, exhausting summer was spent stripping wallpaper applied to our model home, in quarter size chunks. Yes, you read that right, chunks the size of a quarter. Room after room of tedious, fingernail splitting, monotonous work, done with the goal of redoing our entire home to sell. Cocoa Coconut Candy gave us the energy to power through the days of stripping, refinishing walls, paining and all the other projects we were doing.

I have had an ongoing obsession with Emily Dickinson, the New England poet, for years, even naming our daughter after her. While her poetry has captured my heart, who knew she actually loved to bake. One of her favorites was a Coconut Cake and when I read the recipe, knew I had to convert Emily's orginal, into a gluten free, quick and easy adaptation from a mix! I know, cheater, cheater, but alas, we do what we have got to do to recreate historic recipes in the gluten free world we now inhabit!

Our dear friends, the Valles, brought by some fresh rhubarb, cut from another friend's garden. They are so faithful to share God's amazing provision with us, all year long and we appreciate it.
Decided to try a sugar free rhubarb dessert. Last years attempts to make a rhubarb crisp with straight stevia did not quite make it. Why? Rhubarb is too zingy tart to just have stevia, you need some sort of natural sweetener. So how do you calm the tart taste of the rhubarby without using regular sugar? Wild about coconut, and deeply committed to our gluten free, casein free, sugar free lifestyle, I sat looking at a box of coconut milk, craving dessert.
Coconut Gelatin was born out of that, a simple dessert that cooked up in about 5 minutes, then took another hour to set. Coconut Gelatin got RAVE REVIEWS from our family and Emily insists that it be called Coconut Happiness, the other name does not quite describe it adequately. We sat and watched Biggest Loser and ate it, which makes you ponder calories and fat, something I normally am not big on. Nutrition is the name of the game and I do count carbs, though not obsessively.

We were invited over for dessert with a couple from our Sunday School class. Sherri kept saying she was going to make Apple Dumplins and I thought that sounded great, but had no idea what we were in for! We walked in and their house smelled amazing, the smell of cinnamon wafting through the air. I went into the kitchen and watched her flip the dumplins over, and just went woozy over the delicious smell. When they were finally done (patience IS a virtue) they were delicious. Different from a pie crust based dumpling, I knew I had to include this fun recipe in The Prudent Wife dessert section! Not only is it a taste bud tingler, but it is a great, inexpensive treat when company comes over. Don't make them at home, when you're alone!

Guess what I just made??? My very own Mocha Frappuccino. When it comes to cappuccino, I am personally a purist, espresso with foamed nonfat milk is my favorite, and a shake of pure chocolate powder. While out with a friend on a hot day, she treated me to Starbucks, and I had my first (after 20 years of cappuccino) frappuccino and it was actually rather tasty. My disdain for milkshake coffee melted in this cool drink, but I knew I had to figure out how to cut that sweet and make it work for me, so we have two versions.

We met at church, loading up long trailers covered with snow bales (and a fair bit of ice underneath), pulled by tractors.
