Easy Fettuccine Alfredo

My daughters both love Fettuccine Alfredo. I don’t. It has never been made in my home – but when Emily spied it in Pillsbury Doughboy Slow Cooker Recipe book, she asked me to make it in honor of crock pot month! How could I resist. Since I am not a Fettuccine fan, I mainly followed the recipe on this one, and used cheater ingredients!

 

  • 1 ¼ lbs boneless skinless chicken breasts or thighs cut into ¾ pieces
  • 1 container of fresh, sliced mushrooms (or 4.5 oz jar)
  • ½ cup red bell peppers (from a jar or fresh)
  • 2 tablespoons of sherry (I skipped this)
  • 1 16 oz jar of Alfredo sauce – I bought a good one
  • 3 cups frozen broccoli
  • 10 oz uncooked fettuccine
  • 2 tablespoons shredded fresh Parmesan Cheese

Spray crock with non-stick spray. Layer chicken, mushrooms & red bell peppers in the crock. Sprinkle with sherry if using, then dump jar of Alfredo sauce evenly over the top. Cover and cook on LOW for 5-6 hours.

About 25 minutes before it is time to serve, rinse broccoli in warm water, thaw, and drain well. Add broccoli to crock pot, increase heat setting to HIGH for an additional 20 minutes.

Cook fettuccine according to directions on package.

When done, stir into crock pot chicken mixture, coating well. Scoop into bowls and sprinkle with Parmesan cheese.

Serve with a large salad and homemade bread sticks! Emily was in seventh heaven and loved this. Even though I am not a fan of Alfredo, it was pretty tasty, and oh so easy!
