Chicken and Ham Enchilada Casserole

Inspired by the Pillsbury Doughboy Slow Cooker Recipe book, this simple recipe utilizes left over meat, our super cheap crock pot beans and comes in at a whopping 9 grams of fiber, with only 13 grams of fat! Yummy, it is quick to make, a simple way to use leftover meat and smells delicious cooking.

Meat Mix – mix this up together and set aside
1 cup cut up chicken or turkey
1 cup cut up beef of pork
OR 2 cups of whatever meat you have on hand or want to use up!
1 tablespoon cumin
1 tablespoon chile powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
¼ to 1 teaspoon cayenne pepper (if you like it hot and spicy!0
9 corn tortillas
3 small cans of green chiles (we like the 4.5 oz cans of Trader Joes)
2 cups black beans (or 1 15 oz can)
2 cups pinto beans (or 1 15 oz can)
2 cups shredded cheese
½ cup chicken broth
Spray the bottom of a 6 quart crock insert with nonstick cooking spray.
Put three tortillas on the bottom (or 4-5 to cover)
Top with half the chicken mixture
I can of green chilies
2 cups of pintos
½ cup cheese
Pour ¼ of the broth on over the layers
Put three tortillas on top (or 4-5 to cover)
Top with remaining chicken mixture
I can of green chilies
2 cups of black beans
½ cup cheese
Top with remaining 3-5 tortillas
1can of green chilies
1 cup of cheese
¼ cup of broth.
Cover and cook on low for 6 hours!
You can top this off with sour cream, chopped tomatoes, salsa, guacamole, onions, lettuce and olives if you like.
Enjoy with easy Spanish rice or Chipotle rice and a tossed green salad.
**Note, if you have some tortilla chips you need to use up, you could certainly use those leftover chips in this enchilada casserole. It would significantly increase the fat grams, but would work well. We all have days where the kids forget to close the chips properly, then they get stale. This recipe will use them up!
Remember, be flexible with this recipe and use your leftovers, that old turkey and ham from Thanksgiving or Christmas, etc. Change the beans to use what you have – it is very forgiving and super simple!
