Old Fashioned Baked Beans

Fashioned Baked Beans are a favorite dish enjoyed at potlucks and barbecues. This recipe was inspired by the Pillsbury Doughboy Slow Cooker Recipe book, the idea of beans in a crock pot for 38 hours was a recipe I had to try! Packs a whopping 7 grams of fiber per serving for only 190 calories.

 

2 16 oz pkgs of dried navy beans (or about 5 cups of beans)

9 cups water

Then add:

2/3 cup firmly packed brown sugar

2/3 cup molasses

1 tablespoon prepared mustard

I cup chopped onions

  • 1 teaspoon salt (at the end)

In 4-6 quart cooker, combine beans and water. Cover and turn on high setting for 2 hours. Turn off slow cooker and let beans stand for 8-24 hours.

Stir in the rest of the ingredients, except for salt. Turn crock pot on to low setting, cover and cook for an additional 10-12 hours until beans are very tender and most of the liquid is absorbed.

At the end of cooking, add salt and stir well. Adjust seasonings if you would like, adding more salt or mustard as needed.

Delicious with BBQ meat and a big salad!
