Maple Dijon Pork with Sweet Potatoes

Autumn comes alive in this easy crock pot dish for Maple Dijon Pork with Sweet Potatoes. Gluten free, it is an easy recipe to make when you are pinched for time. Use whatever meat you have - chicken pork or turkey will all work well in this gluten free, casein free, dairy free one pot supper. Adapted from Stephanie at http://crockpot365.blogspot.com I was able to use ingredients I had on hand, got on sale and made this for less than $5!!! Woo hoo! Served dinner for 3, and 3 additional lunches.
The Ingredients.
--1 lb boneless pork chops (or 1 lb chicken)
--1 cup chicken broth
--4 sweet potatoes, peeled and chopped
--1 onion, chopped
--2 T dijon mustard
--3 T maple syrup
--3 cloves garlic, chopped
--2 bay leaves
--1 tsp thyme
The Directions.
I used my new 6 quart crockpot and ended up with dinner and three lunches. If you have a large family or would like leftovers, double the quantity.
Put the pork or chicken into the bottom of your crockpot and toss it with the thyme, maple syrup, and dijon mustard.
Peel and slice the sweet potato, and add to the pot. Add the onion and garlic. If you don't want your onion to have a crunch, put it at the bottom of the crockpot; otherwise on top of the chicken is fine.
Pour in the chicken broth. Add the bay leaves.
Cover and cook on low for 6-8 hours, or on high for 4-5. This is done when the pork or chicken is cooked through and the vegetables reach desired tenderness.
I added the spicy turmeric juice leftover from and it was even better! While this was delicious, our family is not really a “sweet with meat” family!
