Simple Slow Cooker Garlic Vegetable Lasagna

Make this Simple Slow Cooker Garlic Vegetable Lasagna in your crockpot the next time you need to bring a covered dish! Stir up each "layer" of this easy breezy recipe, and watch how fast you can pull it together.
No need to precook the lasagna noodles if you follow our secret, simply cover lasagna noodles between layers of "Sauce Mixture" and you will make a delicious lasagna!
Assembles very quickly the night before, pop in the refrigerator and slow cook the next day for your event!
Cheese Mixture
- 2-3 cups cottage cheese
- 1 Tablespoon chopped garlic
- 2 eggs
- 1-2 teaspoons parsley
In a large bowl, stir cheese mixture together, set aside.
Sauce Mixture
- 2 16 oz jars homemade spaghetti sauce (or jarred sauce)
- 1 can tomato sauce
- 1 Tablespoon chopped garlic
In a large bowl, blend sauce mixture together well, set aside.
Vegetable layer
- 3 cups chopped spinach
- 3 cups chopped mushrooms
- 1 can sliced black olives
Prepare each vegetable and put in small bowls, set aside.
Lasagna noodles
- 1 box lasagna noodles.
Once you prepare the
Spray crock, you will be glad you did!
Now for the layers!
Spoon about 1/2 cup of sauce mixture into the bottom of a crockpot.
Top with 4 noodles, breaking into pieces to fit.
Top with HALF of the cheese mixture, then veggie mixture.
Top with 4 noodles
Top with remaining cheese mixture, then veggie mixture.
Top with 4 remaining noodles
Top with remaining sauce mixture.
Cover and cook on low setting for 6-8 hours. OR, since I had a doctor’s appointment on the snowy day this was planned for, we made it at noon and ate it at 6 pm, cooking on high for 5 hours. Somewhere along the line, my crock pot turned off, yet this turned out fabulous! Crock pots are very forgiving!
Sprinkle with remaining 1 cup of mozzarella cheese and if you want to add color, some parsley. Put lid back on and let sit for 10 minutes.
Serve with a green salad and enjoy thoroughly!
