There are MANY recipes online for those of us who are following an uber low carb, GAPS friendly, paleo/primal (without the worldview) type of diet, but still get that little crave for regular mashed taters.

Cauliflower is a member of the Brassica oleracea, which includes it's green brother, broccoli, along with Brussel sprouts, kale, cabbage and collard greens. Cauliflower is loaded with Vitamin C, folate and as a cruciferous vegetable, indole-3-carbinol, which help the body process estrogen properly, helping slow cancer growth. Best of all, cauliflower looks like a brain!

Enjoy your cauliflower - it tastes great and there an endless variety of ways to prepare this super healthy vegetable, available year round.

  • 1 head cauliflower, rinsed and cut into florets
  • 2 cups boiling water
  • sea salt to taste
  • 1 Tablespoon of butter (to taste, can use bacon grease too)

Preheat oven to 350 degrees. Grease or spray non stick spray on an 8 inch round dish.

Put water into a large saucepan and set to boiling. Meanwhile, thoroughly clean the cauliflower, then cut into florets. Cauliflower is such a cool vegetable, it is fun to cut it in half and think of the human brain!

Throw the florets into briskly boiling water and cook with lid on, steaming until tender.

Reserving the boiled water (perfect for adding extra nutrition to soups and broths), carefully take hot, steamed cauliflower and put it in your food processor.

Add salt and a pat of butter and pulse to begin blending. Then turn food processor on and let it run for about a minute or two, until cauliflower florets are mashed like potatoes. Taste and adjust seasonings.

 

Baked Garlic Mashed Fauxtatoes freeze beautifully, so grab extra cauliflower when  you find it on sale, and make up a few extra batches. Store in the freezer, thaw and bake when you need a quick meal!

Bake Baked Garlic Mashed Fauxtatoes in 350 oven for 30 minutes. Serve immediately!
