All American Oatmeal

All American Oatmeal is a fun, patriotic way to jazz up regular oatmeal, and feed your family a burst of delicious anti-oxidants. Simply cut up fresh stawberries, rinse blueberries and top with a dollop of coconut milk, or whipped cream if you can tolerate dairy.

For two full servings or 4 side servings.

  • 2 cups water
  • 1 cup rolled oatmeal (NOT quick cooking)
  • 1/2 to 1 dropperful of stevia

Fruit topping

  • 1/2 to 1 cup blueberries
  • 1 cup chopped strawberries

Make oatmeal according to directions, or follow ours. In a large saucepan on medium high heat, place 2 cups fresh water. As that begins to heat up, pour in 1 cup rolled oatmeal and stir. Cook until water boils, then turn heat down to low. Continue cooking 3-4 minutes, until water is absorbed and oatmeal looks the right consistency. Add stevia to taste - then remove from heat.

Scoop into bowls, top with strawberries and blueberries, a dollop of coconut cream, and serve. Makes a great side dish for brunch.
