Crunchy Baked Breakfast Burritos

We are huge fans of breakfast burritos and had some beautiful fresh tortillas, which my brilliant husband whipped into the perfect Sunday morning, get-out-the-door-quick-breakfast! Crunchy Baked Breakfast Burritos are loaded with breakfast meats, and could easily be made the day before and popped into the oven on those busy Sunday mornings, to give everyone a hot breakfast before church.
Crunchy Baked Breakfast Burritos would be ideal for a brunch, simply slice them into thirds or quarters, and make a few extra to feed a crowd! Or, make ahead, wrap individually in foil and freeze for individual breakfasts. Great way to use up eggs, or breakfast meats found on sale.
Ingredients
- 3-4 large flour tortillas (any size will do)
- slice of bacon for each burrito
- cooked, crumbled sausage
- cheese
Egg Mixture
- 6-8 eggs, beaten
- salt and pepper to taste
- green onions, sliced
- 1 cube of jalapenos (or 1 cut up jalapeno)
- optional toppings - tomatoes, cheese, olives, red peppers, jalapenos
Preheat the oven to 350 degrees.
Super quick and easy directions that require a little bit of chopping, cooking and assembly, Crunchy Baked Breakfast Burritos can even be made ahead and baked the next day!
Scramble eggs, using salt and pepper to taste. We love everything spicy, so added a chopped cube of jalapeno/habaneros for extra spice.
Place the tortillas on a cuttting board. Put a piece of bacon on the center of each tortilla. Divide the scrambled eggs, spooning evenly over the bacon slices in the center of each tortilla. Layer sausage and cheese on top and any other toppings you would like.
Roll like a burrito, and place cut side down, on a baking stone of cookie sheet. Bake at 350 degrees for about 30 minutes, until burritos are nice and crunchy. Serve.
Top with anything your heart desires, salsa, guacomole, green onions, sour cream, etc, if desired, or enjoy just the way they are!
To reheat frozen Crunchy Baked Breakfast Burritos, take out the night before and thaw in the fridge, the next morning, unwrap and bake in a 350 degree oven for about 30-45 minutes.
Microwave method -take Crunchy Baked Breakfast Burrito out of the freezer, unwrap foil and microwave on high for 3 minutes - then bake in a 350 degree oven for about 20 minutes!
