Spring Asparagus Casserole with Chicken Apple Sausage

Spring brings renewal, freshness, and asparagus, and our wonderful new Spring Asparagus Casserole with Chicken Apple Sausage! We enjoyed the Mushroom Ham Egg Casserole GF CF so much, that a version with fresh asparagus was swirling through my mind. Tender, steamed, new spring asparagus along with Chicken Apple sausage, sauteed onions, make a great power breakfast to get us through a busy weekend. Low carb, Paleo and Primal friendly without the worldview, GAPS friendly, with no gluten, dairy, casein, grains or sugar.
Spring Asparagus Casserole with Chicken Apple Sausage is a veggie infused egg casserole that has unbelievable flavor! Best casserole ever and even better knowing it has a wee bit of coconut flour, for extra protein, fiber and holding power! Oh happy day that starts with Spring Asparagus Casserole with Chicken Apple Sausage!

Egg mixture
- 12 eggs beaten
- 1/4 cup coconut flour (sift it if is terribly lumpy)
- 1 cup almond milk, unsweetened
- 1-2 teaspoons spicy mustard (regular or horseradish)
- 1 teaspoon sea salt
- 1 teaspoon cracked pepper
- 1 teaspoon turmeric
- 1/8 teaspoon cayenne pepper
- Optional: 1-2 jalapeno or cayenne peppers, chopped fine
Asparagus "Crust"
- 1 lb fresh asparagus, ends trimmed and sliced into 1 inch pieces
- 1 large onion, chopped
- 4 garlic cloves, minced or use a garlic press
- 1 package Chicken Apple Sausage, sliced in half, and chopped fine (optional)
Preheat oven to 375. Spray a 9x13 pan with non-stick spray or olive oil. We used our Pampered Chef baking stone since they cook egg casseroles so well!
In a cast iron skillet, pour a dollop of olive oil. Saute chopped onions for a few minutes, then add minced garlic. Cook until golden brown.
Meanwhile, rinse the asparagus well, chop off the ends (we put ours in a bowl, and slowly feed the asparagus ends to the dog over a few days and she LOVES them! No waste) Cut the asparagus into 1 inch segments. When the onions become golden brown, throw the asparagus into the same pan, mix gently and put in a tablespoon or two of water to lightly steam. Cook until crisp tender, which is just a few quick minutes.

Beat eggs well. Add almond milk and coconut flour, beating coconut flour in with a wire whisk, until fully incorporated. Add sea salt, cracked pepper, mustard, turmeric and cayenne, whip into eggs with whisk. Add mustard and additional chopped jalapenos or cayenne peppers if using.

Layer the asparagus mixture on the bottom of the casserole dish, fully covering it. Top with chopped Chicken Apple Sausage, if using, distributing evenly. Ideally, you want a bite of asparagus and sausage in each bite!

Bake for 40 minutes until thoroughly cooked. May serve Spring Asparagus Casserole with Chicken Apple Sausage plain the first day, then topped with avocado and salsa the next, sauteed mushrooms, or guacamole and salsa, to change things up on subsequent mornings!
