Mushrooms Ham and Egg Casserole GF CF

Have you ever just had way too much for lunch, needed a bite for dinner, but just did not feel like making dinner? Well, the idea for Mushroom Ham Egg Casserole GF CF cropped up out of a desperation to whip up a quick dinner, and have a few breakfasts to power us through a busy week. Low carb, Paleo and Primal friendly without the worldview, GAPS friendly, with no gluten, dairy, casein, grains or sugar.

Mushrooms Ham Egg Casserole GF CF is a veggie infused egg casserole with a bit of coconut flour, for extra protein, fiber and holding power! Great for breakie, brunch, dinner or a quick dinner after a long day. Freezes well and reheats beautifully.

Egg mixture

  • 12 eggs beaten
  • 1/4 cup coconut flour (sift it if is terribly lumpy)
  • 2/3 cup almond milk, unsweetened
  • 1-2 teaspoons spicy mustard (regular or horseradish)
  • 1 teaspoon sea salt
  • 1 teaspoon cracked pepper
  • 1 teaspoon turmeric
  • 1/8 teaspoon cayenne pepper
  • Optional: 1-2 jalapeno or cayenne peppers, chopped fine

Veggie Ham "Crust"

  • 2 cups mushrooms, sliced and chopped into O'Brien potato size
  • 1-2 cups chopped squash - zucchini and yellow, or combination of summer varieties
  • 1 cup ham, chopped
  • 2 green onions, slivered

Preheat oven to 375. Spray a 9x13 pan with non-stick spray or olive oil. We used our Pampered Chef baking stone since they cook egg casseroles so well!

Layer the chopped mushrooms on the bottom of the casserole dish, fully covering it. The mushrooms are a great substitute for potatoes. Top with chopped squash, chopped ham and green onions. Evenly distribute over the mushrooms.

Beat eggs well. Add almond milk and coconut flour, beating coconut flour in with a wire whisk, until fully incorporated. Add sea salt, cracked pepper, mustard, turmeric and cayenne, whip into eggs with whisk. Add mustard and additional chopped jalapenos or cayenne peppers if using.

Bake for 40 minutes until thoroughly cooked. May serve plain the first day, then topped with avocado and salsa the next, sauteed mushrooms, or guacamole and salsa, to change things up on subsequent mornings!
