Chocolate Gravy GF CF

As we were busy making our delectable Coconut Bread into French Toast, and oohing and ahhing over a new breakfast favorite, something possessed me to come to Facebook. I don't normally stop in the middle of cooking and run to FB, but it was definitely Providential!
A true Southern lady, Mrs. Betty, tagged me in a post about a Chocolate Gravy recipe with these fateful words:
My life, will never be the same. With maple syrup gone by the wayside for now, following a GAPS friendly, Paleo/Primal diet without the evolutionary worldview, zero sugar of any kind, nothing artificial, brain building diet, we were pondering what on earth to put on top our new, totally safe culinary creation. And I am determined to live gracefully in the South....and this sugar free recipe for Chocolate Gravy is helpling!

In a flash I threw the computer down and ran....yes...RAN to the cupboard and grabbed the stuff. The second batch of Coconut Bread French Toast was gently bubbling in the pan, tended to by Emily. I told her we were making Chocolate Gravy, thanks to Mrs. Betty and she stood cautiously by wondering what on earth?
Chocolate Gravy? In a sugar free, flour free, gluten free, casien free home. We don't own half the ingredients.
Like that has ever stopped a Baughn. Hello. We improvise - that is why we LOVE to cook!
So here it is, the Paleo Primal (without the worldview) GAPS, Anti-Candida, Low Carb, Sugar Free, Stevia based Chocolate Gravy Recipe!

- 1 Tablespoon butter or VCO
- 1/2 cup coconut milk
- 1-2 Tablespoons unsweetened cocoa (the more, the darker)
- 10 drops Vanilla Stevia
- 1 teaspoon vanilla (sadly, we were out, but 1 teaspoon is the amount - this is similar to a chocolate ganache I have made for years!)
- dash of real sea salt (that means a DASH, to bring UP the flavor not make it salted chocolate gravy!)
Really quick, while the Coconut Bread French Toast is cooking, throw a little saucepan on medium heat. Throw the butter in, slicing it up so it melts quicker. Dash to the pantry and get the supplies, then throw in 1/2 cup coconut milk, cocoa powder and start with 7 drops of stevia.
Whip with a mini-whipper, whisk thoroughly, just heating through.
In about 3 minutes, you will have a velvety smooth, gorgeous Chocolate Gravy! Add vanilla, whip in.

Now taste it. Is it sweet enough? This is a distinctly individual thing, some will like it sweeter than others! If you need to, add a few drops of vanilla stevia at a time, to get to your desired sweetness level. When you get it there, stop, and pour over Coconut Bread French Toast or anything else you desire. I think it would be heavenly over strawberries!
Stare at the chocolate pattern drizzling over the Coconut Bread French Toast. Drool. Take lots of photos, then dig in!
