Broccoli Sausage Breakfast Casserole

Broccoli Sausage Egg Breakfast Casserole is GF/CF, low carb, anti-inflammatory, GAPS diet friendly, brain building with turmeric, spicy with sausage & habaneros (optional) and filling...not to mention breakie for the rest of the week!

  • 3 cups fresh broccoli, chopped into small pieces
  • 1-2 Sausages, nitrate free, preferably organic, cooked and crumbled (about 1- 1 1/2 cups of sausage)
  • 10 eggs
  • 1/3 cup water (casein free, could use unsweetened Almond Milk, Coconut Milk,etc)
  • 1 heaping teaspoon turmeric
  • salt and pepper to taste
  • Optional - 1 cube of jalapeno or habanero peppers OR 1 chopped jalapeno or other pepper

Preheat oven to 350 degrees. While oven is heating, crack eggs into a large bowl and beat gently, add water. Add turmeric and salt and pepper to taste, and incorporate thoroughly.

Chop broccoli into small pieces, chop pepper if using. Add to egg mixture, along with sausage. Stir to incorporate all ingredients.

Pour into a 9x13 baking stone or dish, that has been greased. Pop into 350 degree oven for 35-45 minutes. Serve immediately.

When we make Broccoli Sausage Egg Casserole, we normally eat plain the first day, the 2nd day top with sliced avocado and salsa, and perhaps sauteed mushrooms with jalapenos on the 3rd day to change it up a little!

**if you eat casein and cheese, you can add 1 cup of cheese in it before baking, or top with a little cheese at the end.
