Fire Roasted Green Chili Breakfast Casserole

Fire Roasted Green Chile Breakfast Casserole was an absolute low carb, high energy HIT!! Whipped out quickly for brunch on a Saturday, there was plenty left over for an easy Sunday breakfast before church, and even a portion for hubby before work on Monday. Add a grapefruit and you have a fantastic low carb, gluten free breakfast loaded with nutrition, protein, anti-oxidants and flavor!

Mild and delicious Fire Roasted Green Chiles from Trader Joe's are the star of this recipe, but any mild green chile will work. Super easy to pull together, Fire Roasted Green Chile Breakfast Casserole would be ideal to assemble the night before and pop in the oven for a tasty breakfast!

10-12 large eggs (organic or DHA preferred) beaten
1 cup milk, raw milk, half & half, cream or unsweetened nut milk
2 4 oz cans Fire Roasted Green Chiles (the little cans from Trader Joe's are SPECTACULAR!)
1 bunch green onions chopped
1/2 to 1 cup chopped ham
2 cups grated cheese (we used sharp cheddar, colby jack and spicy jack)
1 teaspoon salt
1/2 teaspoon freshly cracked pepper
1/8 to 1/4 teaspoon cayenne pepper
1 teaspoon dry mustard

Preheat the oven to 400. Spray a large 9x13 pan with non-stick spray. We use the Pampered Chef Rectangular Baker for most of our breakfast casseroles - it just makes them taste better and clean up is a breeze!

Whip eggs together with milk. Add salt, pepper, cayenne pepper and mustard, whipping to mix. Set aside.

Dice ham, chop green onions, and put into 9x13 pan. Spread Fire Roasted Green Chiles over it, then pour egg mixture over it. Mix to incorporate ham, onions and peppers into the egg mixture - to make sure the flavor is evenly spread throughout the dish. Top with grated cheeses and pop into the oven for 40 minutes.

OPTIONS: To boost anti-oxidants, flavor and vegetable count you can certainly up the veggies. We are using up what we have in the fridge, so I was without my spinach staples I like to include in my breakfast casseroles. Add 2 cups thinly cut spinach or a cup or two of sliced red, yellow or orange bell peppers in with the vegetables.

OPTION LOW FAT: If low fat is your thing, substitute skim milk or omit milk altogether, use low fat cheese, and fake eggs. But really, why mess with what God put on this earth - eat REAL FOOD!
