Spicy Ham Breakfast Casserole

Looking for the perfect weekend casserole to eat before working out? Spicy Ham Breakfast Casserole - loaded with protein and fresh vegetables, this will fuel you through a work out, or just a busy weekend! Great to use up that leftover ham from the holidays!

Saute

  • 1 cup ham (optional)
  • 3 jalapeno cubes or 2-3 jalapenos finely diced
  • 3 shallot cubes or 3 shallots finely diced
  • 3 green onions, sliced thin
  • 2 cups mushrooms

Whip together

  • 12 eggs, beaten with spices below
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked pepper
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1/2 cup milk (or non-dairy milk of choice)

Spinach "crust" and cheese topping!

  • 3-6 handfuls of fresh spinach, chopped
  • 1/2 cup grated cheese - choose a FLAVORFUL variety!

Preheat oven to 400. Spray a large 9x13 pan with non-stick spray. We use the Pampered Chef Rectangular Baker for most of our breakfast casseroles - it just makes them taste better and clean up is a breeze!

Whip eggs together with milk. Add salt, pepper, ccumin and turmeric, whipping to mix. Set aside.

Dice ham, finely dice jalapenos and shallots, chop mushrooms and saute in medium skillet, to blend and meld flavors.

Chop spinach lightly, place in bottom of 9x13 pan. Spread the warm meat veggie mixture over the spinach, then pour egg mixture over it. Mix to incorporate ham, onions and peppers into the egg mixture - to make sure the flavor is evenly spread throughout the dish. Top with grated cheeses and pop into the oven for 40 minutes.

OPTIONS: To boost anti-oxidants, flavor and vegetable count you can certainly up the veggies. We are using up what we have in the fridge, but feel free to add additional veggies like a cup or two of sliced red, yellow or orange bell peppers in with the vegetables.

OPTION LOW FAT: If low fat is your thing, substitute skim milk or omit milk altogether, use low fat cheese, and fake eggs. But really, why mess with what God put on this earth - eat REAL FOOD!
