Organic Curried Celery Soup |

Do you ever find yourself needing to use up that EXPENSIVE organic celery before it goes bad? Well here is a delightful soup recipe that I came across as I was contemplating what to do with my celery!
Organic Curried Celery Soup ~ A lunchtime specialty - 2 potatoes - Chopped
- 1 onion – Chopped
- 2 tablespoons Oil (Organic butter, Extra Virgin Olive Oil or Coconut Oil)
In a large stockpot, sauté the onion and potatoes in your choice of butter until the onions are translucent. As always, use as much organic produce, spices, oils, etc as you can.
- 1 bunch celery – Sliced, including celery tops
- Stir well; add celery and add broth. Add the seasonings below stirring well:
- 1 tablespoon Curry Powder
- 1 tablespoon Ginger, peeled and chopped up
- ¼ to ½ teaspoon Cayenne Pepper (this gives it a wonderful spicy flavor – can double)
- 1 jalapeno pepper (optional, this give extra spiciness)
- Organic Sea Salt to taste
- Pepper – cracked fresh to taste

Don’t forget to adjust the salt and pepper to your personal tastes after 10 minutes. Simmer on low heat for 30 minutes. Divide into batches and puree the entire mixture in your Vita-Mix, food processor or blender. Season with a squeeze of fresh organic lemon or lime juice and add 2 tablespoons of butter if you desire, stirring both into the pot. Serve in pretty soup bowls and add if you want to step it up a notch, sprinkle chopped cilantro or green onions and some lemon zest on top. Delicious for lunch and has a decidedly Indian flair. It smells fabulous cooking. Freezes beautifully in mini containers for lunch servings, or a larger family size container. Recipe can be doubled! As ever - adjust seasonings to whatever works best for your family! You know your taste buds!
