Salsa Steaks - Use Organics From Leanne Ely, the fabulous Dinner Diva at "Saving Dinner" a friend of Flylady's! Her Menu Mailers are fabulous -and this is the recipe rave. We made it for dinner tonight, along with French Haricot Verte (green beans, sauted in EVOO with some fresh sea salt and cracked pepper) and the "Cauliflower rice" and a huge salad with fresh greens, mushrooms and Amish country blue cheese. I did forget the gorgeous tomatoes on the counter, but that is okay! It was so good, but my salsa was a little HOT and my younger daughter actually CRIED as she gobbled it down! Do try it and go visit Leanne's site for a variety of different menus, with shopping lists and you just buy organic as much as you can!

Salsa Steaks Serves 44 cube steaks 1/2 teaspoon cumin Salt and pepper to taste 1 small green bell pepper, seeded, de-ribbed and sliced 1 medium onion, sliced 1 1/2 cups chunky salsa
Pre-heat oven to 375 degrees. Place steaks in a 9- x 9-inch baking dish and season with cumin andsalt and pepper. Arrange bell pepper and onion over the meat and pour the salsa overall. Cover with aluminum foil wrap and bake for 25 to 30 minutes, or until steaks are done to your liking.Per Serving: 253 Calories; 14g Fat; 22g Protein; 10g Carbohydrate; 3gDietary Fiber; 63mg Cholesterol; 478mg Sodium. Exchanges: 0 Grain(Starch); 3 Lean Meat; 1 1/2 Vegetable; 1 Fat.
LC SERVING SUGGESTION: Steamed green beans and Spanish Cauli-rice(process a head of cauliflower in a blender or food processor until itresembles grains of rice; steam "rice" till tender; add a little salsaand salt and pepper to taste). Add a salad of Romaine lettuce, slicedred onion and cherry tomatoes. SERVING SUGGESTION: Serve Spanish rice instead of Cauli-rice. KOSHER: None needed.
